Carrot Soup

Makes: Enough for 3 Servings

Ingredients:

1/4 cup Hemptons Hemp Seed Oil
3 Tablespoons Hemptons Shelled Hemp Seed
4 cups carrots (chopped)
3 cups water
1/4 cup white onion (chopped)
1/4 cup parsley
1/4 cup Arugala or Spinach
1/4 cup sun dried tomato
2 Teaspoons dried oregano
1 large Avocado (peeled and chopped into cubes)
1/4 cup fresh squeezed lemon juice
2 Teaspoons dried hot pepper (optional)

Directions:

Combine all ingredients except avocado and Hemp seed nut in a blender. Blend on high until creamy smooth and warm (Approx 5 minutes). This soup is wonderful served warm.

Add some avocado into each serving bowl. Pour in the soup. Sprinkle the Shelled Hemp Seeds on top. You can garnish with a sprig of parsley.

 

 
 

Spinach Salad with Mandarin & Hemp Oil Dressing

Ingredients:

3 Teaspoons Hemptons Hemp Seed Oil

1 Teaspoon fresh lemon juice

1 Teaspoon balsamic vinegar

1 Teaspoon Dijon mustard

1 Crushed clove of garlic

1 Cup mandarin segments

1/2 Cup chopped fresh parsley

1 Cup Fresh Baby Spinach leaves, torn

Salt & Pepper

Hemptons Shelled Hemp Seed

Directions:

Mix the Hemp Seed Oil, Lemon Juice, Balsamic Vinegar, Dijon Mustard and Garlic together in a bowl, let stand 15-20 minutes for the flavour to develop.

Mix the Mandarin Segments, Parsley and Spinach Leaves together. Pour the oil mixture over and toss. Sprinkle with salt, pepper and Hemp Nuggets. Enjoy.

Warm Baby New Potato Salad

Ingredients:

 

3 lb Baby new potatoes
1 tbsp Dijon mustard
2 tbsp balsamic vinegar
2 pinches garlic
1/2 red onion
1 tbsp fresh tarragon
1 tbsp Hemptons Hemp Seed Oil
salt, pepper, chopped parsley

 

Directions:

Boil or steam baby potatoes. Strain.

In a large bowl, mix the mustard, vinegar, garlic, onions, tarragon, chives, salt pepper and Hemp Seed Oil. Add potatoes and mix together thoroughly. Sprinkle chopped parsley on top and serve warm. Enjoy!

 
   

Hemptons Pesto

Makes about 1 1/2 cups

Ingredients:

2 cups of fresh basil, tough stems removed

1/2 cup Hemptons Shelled Hemp Seed

1/2 cup grated parmesan cheese

3 cloves garlic

3 tbsp. Hemptons Hemp Seed Oil

2 tbsp. fruity olive oil

Salt and fresh-ground pepper to taste

Directions:

Clean and dry the basil.

Chop in a food processor.

Add shelled Hemp seeds, cheese, garlic, Hemp Seed Oil and 1 tbsp. olive oil.

Process in short bursts until you like the consistency.

Slowly add the rest of the Olive Oil keeping an eye on the consistency. Not all the oil needs to be added.

Add salt and pepper to taste.

Serve over hot pasta.

 
 

 

Savoury Hemp Seed Butter

Ingredients:

1-1/4 cups Hemptons Shelled Hemp Seed

1 small garlic clove

2 Tablespoons Hemptons Hemp Seed Oil

1 Teaspoon soy sauce

Sea salt and pepper (optional)

 

Directions:

Grind one cup of the seeds in a blender. Combine the rest of the un-ground shelled seeds, the ground seeds, oil and pressed garlic in a small bowl and blend them thoroughly with a fork. Season with soy sauce, salt and pepper. Add more oil for a softer consistency. Store the butter in a glass jar in the refrigerator.

Note: Another way to produce nut butter is to grind the hulled seeds in juicer using the blank attachment.
